Two fillets of frozen Mackerel

Fresh round mackerel is graded into standard weight classes or according to customer specifications. Then the fish is cooled down to -3 degrees and filleted in filleting machines. Immediate IQF frozen (individual quick freezing) until core temperature has reached-20°C and packing in a carton with plastic inner liner. Filets are glazed prior to packing.
